Our factory has a capacity to crush 120,000 tons of wheat annually. Wheat, carefully selected by our suppliers from our region and various regions of Turkey, is sent to our factory in Bursa/Inegol. Samples are taken using a probe on the vehicle. The wheat is analyzed in our laboratory to determine its quality and characteristics. If it meets the ANILLAR UN TİCARET VE SANAYİ AŞ. purchase criteria, it is classified in our silos and warehouses according to its purpose and characteristics. Different quality and classes of wheat are taken into blending silos with percentages determined by production and management.
The blended wheat passes through the scale for a certain time and amount, arriving at the separator. Here, coarse dirt, foreign materials, and broken wheat are first separated. Stones are then removed in the stone separator machine, and foreign weed seeds are separated in the trieurs. Since the composition of these foreign materials differs from wheat, affecting the color, composition, and quality of the flour produced, the wheat is cleaned through these mentioned stages. "Good cleaning is essential for good flour quality."
For quality milling, the physical structure of the wheat, i.e., its moisture content, must reach the desired level. The conditioning process (adding water) is applied to provide softness and elasticity to the bran to reach the desired moisture level. Cleaned and rested wheat blend is broken using machines called rollers. The milling process takes place with the help of the speed difference and teeth between the rollers.
The wheat broken in the rollers reaches sieves with different mesh sizes using the pneumatic system. In this stage, large pieces separated from the flour are classified in the sieves and subjected to re-grinding. This process continues until the bran is completely separated from the flour. This ensures the quality and homogeneity of the produced flour.
The produced flour is stored in different silos according to its characteristics. To ensure homogeneity, it is blended again during filling. At Anıllar Flour Factory, production is carried out without human touch, and every stage is kept under control. In addition to the controls performed in the processes, necessary analyses are conducted in the quality control laboratory on the final product. Furthermore, bread samples are produced in the laboratory oven, and the quality of the flour is re-examined. If the produced flour meets the production expectations of Anıllar Flour Factory, it is filled and offered to our customers using automatic bagging machines without human touch.
